This shopping list is for a larger, party-size mousakas (20-25 people)

For the regular size click here.

For the base:

  • 350g extra virgin olive oil

  • 4 large aubergines

  • 6 large potatoes

  • 75g graviera cheese (or kefalotyri)

  • Breadcrumbs

For the minced meat:

  • 1.5kg minced beef or lamb, 20% fat (or pork as Cypriots tend to use)

  • 2 heaped tbsp tomato puree

  • 1 large jar of tomato passata

  • 2 large onions, finely chopped or blended

  • 3-4 cloves of garlic

  • 2 bay leaves

  • 3 tsp ground cinnamon

  • 2 tsp ground nutmeg

  • 1 tsp all spice

  • 1 large glass (250ml) of red Mavrodaphne, Commandaria or 150ml of cognac

For the bechamel sauce:

  • 300g organic butter or extra virgin olive oil

  • 300g plain flour

  • 4 pints (2x 1.1365 litre bottles) organic whole milk

  • 1 tsp nutmeg

  • 1 tsp cinnamon

  • 4 egg yolks

  • 150g graviera cheese, and 50g extra for the mousakas topping
