This shopping list is for a larger, party-size mousakas (20-25 people)

For the base:
350g extra virgin olive oil
4 large aubergines
6 large potatoes
75g graviera cheese (or kefalotyri)
Breadcrumbs
For the minced meat:
1.5kg minced beef or lamb, 20% fat (or pork as Cypriots tend to use)
2 heaped tbsp tomato puree
1 large jar of tomato passata
2 large onions, finely chopped or blended
3-4 cloves of garlic
2 bay leaves
3 tsp ground cinnamon
2 tsp ground nutmeg
1 tsp all spice
1 large glass (250ml) of red Mavrodaphne, Commandaria or 150ml of cognac
For the bechamel sauce:
300g organic butter or extra virgin olive oil
300g plain flour
4 pints (2x 1.1365 litre bottles) organic whole milk
1 tsp nutmeg
1 tsp cinnamon
4 egg yolks
150g graviera cheese, and 50g extra for the mousakas topping
